Chocolate Truffles

Makes about 24 truffles.


  • 80ml Double Cream
  • 200g Dark Chocolate
  • 2 tsp instant coffee powder


  • Finely chopped nuts (eg. walnuts)
  • Cocoa Powder or Icing Sugar, to dust
  • 100g White Chocolate, melted.


  1. Bring the cream to the boil in a small pan, then remove from the heat. Add the dark chocolate and stir until melted.
  2. Stir in the coffee. Transfer to a small bowl, cover and refrigerate until cold and thick.
  3. Roll rounded teaspoons of the mixture onto a lined baking tray and chill until firm. (If the mixture is too soft to roll, drop rounded teaspoons of the mixture onto the tray and refrigerate for 15 minutes to firm up before rolling into balls).
  4. Now you can add toppings of your choice. If you are using white chocolate, melt it and use a fork to hold the truffles whilst you use a spoon to cover them in the chocolate. Or you could pipe white chocolate onto it in a swirly pattern, etc. etc.!
