Yoghurt Loaf

This cake was a great success! I wasn’t really sure what to expect, but it was deliciously moist and fruity. It is not the prettiest of cakes, but it is certainly one of the tastiest. It is just so easy to make and can easily be made Lactose free by using Lactose Free Yoghurt.

Ingredients:

  • 2 Eggs
  • 125g Strawberry or Raspberry Yoghurt (I used Strawberry)
  • 250g Sugar
  • 125g Sunflower oil
  • 375g Self-raising flour
  • 1 whole Banana, chopped
  • 1 whole Apple, chopped

Method:

  • Pre-heat oven to 180˚C. Grease and line a loaf tin.
  • Crack the eggs into a bowl and beat for a minute by hand. Add the yoghurt and mix well. Then add the sugar and oil, mixing well. Now add the flour and mix again. Finally, add the banana and apple and mix all ingredients.
  • Pour the batter into the prepared tin and bake in the middle of the oven for 1 hour and 30 minutes, or until a skewer comes out clean.
  • Let the cake cool in its tin for 5-10 minutes before turning out onto a wire rack to cool completely.

Tip: Place a foil dome over the top of the cake towards to end of baking to stop the top from over-browning.
