High Protein Black Bean Brownies

These brownies are great if you have a sweet tooth but are on a high protein, low calorie diet. I calculated they have around 130kcal and 10g protein per portion, and they are super quick to make.

Makes 16

Ingredients:

  • Around 400g cooked black beans (a can is fine, but I cooked about 150g raw beans).
  • 3 Eggs
  • 1 tsp Vanilla Extract
  • 1/6 cup Agave Nectar
  • 1/2 cup Unsweetened Cocoa Powder
  • 3/4 cup Whey Protein Powder (I used vanilla, you could use Chocolate)
  • 1 tsp  Baking Powder

Method:

  1. Preheat oven to 180˚C and line a baking tray with parchment.
  2. Place the beans in a blender to puree. Then add the eggs, vanilla, and agave nectar. Mix in the blender.
  3. In a bowl mix together the cocoa, whey protein and baking powder. Then combine these with the ingredients in the blender and mix well.
  4. Place the mixture in the prepared tin and bake in the oven for 25-30 minutes, or until a toothpick/skewer comes out clean.
  5. Leave to cool in the tin for a few minutes before cutting into 16 portions and transferring to a wire rack to cool completely.

Tips:

  1. Personally, I found these a bit dry, so more experimentation is needed! Next time I will try adding  a cooked apple to it the mixture. Unsweetened apple sauce could also be used.
  2. Honey can be used as a substitute to agave nectar.
