Burger Cupcakes

I’m going to play some games round a friend’s house tonight so I thought I’d bring some burgers!

Makes 10 bite-sized burgers.

Ingredients:

For the cupcakes:

  • 100g (4oz) Butter, softened
  • 100g (4oz) Sugar
  • 2 medium Eggs
  • 100g (4oz) Self-Rasing Flour
  • 1 tsp cocoa powder

For the Buttercream:

  • 50g (2oz) Butter
  • 100g (4oz) Icing Sugar
  • Colourings as required

For the topping:

  • A few sesame seeds

Method:

For the cake:

  1. Preheat oven to 190˚C. Place 15 cupcake cases in a patty tin (or just grease a patty tin and use that). If you’ve got reusable silicone cases then definitely use those.
  2. Cream butter and sugar until light and fluffy. Beat in the eggs, one at a time, adding a little flour with each. Gently fold in the remaining flour.
  3. Place around 1/3 of the mixture into a separate bowl and add the cocoa powder, mixing in well.
  4. Half fill the cupcake cases with the mixture and bake for around 15 minutes, until firm. I managed to get 10 normal cupcakes and 5 chocolate cupcakes. This is the perfect ratio – you want to try to get twice as many normal cupcakes as chocolate ones. Leave to cool on a cooling rack.
  5. Once cool, remove the cases and cut all of the cupcakes in half. Place a slice of chocolate cupcake in between a normal cupcake.

For the Buttercream:

  1. Cream the butter, gradually add the icing sugar and cream together.
  2. Separate the mixture into 3 separate bowls or containers. Add colours appropriately to make one red (the ketchup), one yellow (the mustard) and one green (the lettuce).
  3. Fill 3 icing bags with the icing, one colour in each (I made quick icing bags out of baking parchment). Gently pipe the red icing around the edge of the “burger”, in a circular fashion, followed by the yellow. Then get the green and wiggle it up and down as you go around the cirle, as in the photos.

Now just place the top of the cupcake back on the top, then brush the tops with a little bit of water and sprinkle on some sesame seeds. Perfect.
