Orange Cream Cheese Frosting

The perfect frosting to cover (or fill) any Carrot Cake. I find the addition of orange zest really compliments flavours within the cake, as well as making the frosting a little more interesting than the traditional one.

Makes enough to cover a 20cm (8″) Square cake or a 22cm (9″) round cake.

Ingredients:

  • 90g Butter (at room temperature)
  • 300g Cream Cheese (at room temperature)
  • 170g Icing Sugar
  • the Zest of an orange

Method:

  1. Place butter in a bowl, and with an electric whisk (or electric mixer with paddle attachment) whisk until light and fluffy. Add the cream cheese and mix again until fluffy.
  2. Add sugar and zest and beat for a further few minutes.

Tips:

  1. Do not over-whisk the mixture as it will become liquidy again once being more like frosting.
  2. I found once I covered the cake in one layer, I needed to put it in the fridge to set again since it had melted slightly in the hot kitchen.
