These candied carrots make an excellent additional decoration for any Carrot Cake. Or, they are good as a treat on their own!
Ingredients:
- 1 carrot (try to get a long one for nice long strips of carrot)
- 1 1/2 cups sugar
- 1 cup water
Method:
- Using a mandoline, or a good knife, cut the carrot into strips. Try to make this as thin as possible.
- In a pan, combine the sugar and water. Bring to a boil, stirring the sugar to dissolve. Add the carrots, reduce to a simmer and cook until the carrots become translucent (around 10-12 minutes).
Storage: If the carrots are kept in their syrup, they will last in the refrigerator, in an air-tight container, for up to 3 days.
