Shortcrust Pastry

Makes 8oz Pastry.


  • 225g (8oz) Plain Flour
  • Pinch Salt
  • 50g (20z) Lard
  • 50g (2oz) Butter
  • Around 30ml (2tbsp) water
  • 25g (1oz) Caster Sugar, if sweet pastry is required.


  1. Mix flour and salt in  a bowl, rub in the fats.
  2. Using a knife to cut and stire, mix with cold water to form a stiff dough.
  3. Turn the dough onto a floured worksurface and knead lightly.
  4. Roll out and use as required.

Tip: Self-raising flour may be used and the pastry will have a more cake-like texture.
