No Egg Chocolate Pudding

This is a great recipe for a dessert when you have no eggs in!

Note: Recipe slightly adapted from Smitten Kitchen. This pudding can last for up to 3 days in the fridge.

Serves 6

Ingredients:

  • 1/4 cup Cornflour
  • 1/2 cup Sugar
  • 3 cups Milk (whole milk is best)
  • 6 ounces 62-70% cocoa Chocolate, coarsely chopped
  • 1 tsp Vanilla Extract

Method:

  1. Add the cornflour and sugar into a bowl and place over a pan of simmering water. Slowly whisk in the milk, making sure all ingredients are incorporated. Make sure you whisk out any lumps which begin to form. After 15-20 minutes, the mixture will have thickened nicely. At this stage add the chocolate.
  2. Continue stirring for a further 2-4 minutes, or until the pudding is smooth and thick. Remove from the heat and stir in the vanilla.
  3. Pour into individual dishes. Refrigerate for at least 30 minutes, then sprinkle some icing sugar on for decoration and serve.

Tip (taken from Smitten Kitchen): If you like pudding skin, pull plastic wrap over the top of the serving dishes before refrigerating. If you dislike pudding skin, place plastic wrap on top of the pudding and smooth it gently against the surface before refrigerating.
