Drop Cookies

These cookies are quick and simple to make, but taste great! Just slightly gooey in the centre, they are a firm favourite in my family.


  • 75g (3oz) Butter
  • 75g (30z) Granulated Sugar
  • 75g (30z) Brown Sugar
  • Few drops Vanilla Extract
  • 1 egg
  • 175g (60z) Self-raising flour (see Tips, below)
  • 50-100g (2-4oz) Chocolate Chips or similar (see Tips, below)


  1. Preheat oven to 200°C (180°C) for fan-assisted ovens, and grease a baking sheet.
  2. Cream butter with sugars and vanilla extract. Beat in the egg.
  3. Fold in the sifted flour and chocolate chips.
  4. Drop spoonfuls of the mixture onto baking sheets and bake for 12-15 minutes.


  1. For extra chocolately cookies, you can substitute 1-2oz of Flour for Cocoa. My family actually prefer it without the cocoa though.
  2. I find that Smarties work well instead of chocolate chips, and also orange flavoured chocolate cut into small pieces works very well. In fact, I made a lactose-free version of these using Soya Spread instead of butter, and Orange Flavoured Soya Chocolate.
