Blueberry Muffins

Blueberry Muffins are my favourite type of muffin. Unfortunately I didn’t have any muffin cases when I made these, so I had to make small cupcake sized ones. Maybe next time!

Makes 12


For the Struesel Topping:

  • 1/4 cup Plain Flour
  • 2 tbsp packed brown sugar (Muscavado)
  • 2 tbsp Butter
  • 1/4 tsp ground cinnamon

For the muffins:

  • 1 cup Milk
  • 1/4 cup Vegetable Oil
  • 1/2 tsp Vanilla Extract
  • 1 egg
  • 2 cups Plain Flour
  • 1/3 cup Sugar
  • 3 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 cup Blueberries


  1. Preheat oven to 200°C (180°C for fan-assisted).

Prepare Streusel Topping:

  1. Just mix all the ingredients together in a bowl until crumbly.

For the Muffins:

  1. Beat milk, oil, vanilla and egg in a bowl. Stir in flour, sugar, baking powder and salt. Mix well until the flour is moist. The batter will be lumpy.
  2. Fold in the Blueberries, then divide the mixture evenly amoung muffin cups.
  3. Sprinkle about 2 tsp of Streusel topping on each muffin. Then bake in the oven for 20-25 minutes or until golden brown.
